understanding high mountain oolongs

Although the style was first crafted in China, the Taiwanese have really taken the lead in perfecting oolong tea. Oolong is globally synonymous with Taiwan, it's apparent from the diversity, range of growing regions, and styles within the small island country.

Oolong tea is arguably the most complex category of tea, ranging widely in oxidation levels, which creates vastly different flavors and textures. Oolongs are known for their rolled shape, which unfurl beautifully into full leaves as you brew them. This is done in the final rolling step, and is characteristic of the style.

When we talk about high mountain oolongs, we're talking about tea that is grown and produced at an elevation of over 3000 feet above sea level. In Taiwan, the mountainous regions make for an ideal tea-growing environment. The area is known for high humidity and natural precipitation. Typically, the tea fields are blanketed in fog for a large portion of their existence.

High mountain oolongs are prized for their complex flavors, aromas, and creamy body. It's traditional in Taiwan, to savor and appreciate the taste of the tea. It is considered an art form, mindful brewing, and is highly respected in the culture.

High mountain oolongs have a high concentration of antioxidants, anti-inflammatory properties and nutrients. Most notable is its high levels of EGCG (epigallocatechin), which has been studied to boost cardiovascular and metabolic health.
