Origin: Dong Ding Mountain, Taiwan / Harvest: Winter 2018

Why We Love It: 100% handmade using the most traditionally production methods, this tea is a true testament to the region’s history. A few decades ago, the three most prized tea regions in Taiwan were Wenshan, Musha and Dong Ding. Farmers in higher elevation regions started making rolled oolongs using modern techniques and machinery to streamline production and cut costs, which took away from the ancient craft and generations of tea makers in these regions. Today, a small amount of farmers have gone back to their family roots, producing fully handmade, traditional style oolongs, like this Dong Ding.

We Taste: Buttery popcorn, pears, and apple blossoms

How We Brew It: Steep 4 grams in 8-16 ounces of 190F water for 2-3 minutes. Can re-steep 2-3 times. We recommend using 7g in a gaiwan.
